A huge range of new products produced by various industrial activities (or their sub-products) has been introduced into the environment and can reach the human environment via air, water or (and mainly) food. The introduction of these xenobiotics (compounds foreign to a living body) into the organism induces or encourages the development of numerous pathologies, some of the most worrying examples being endocrinal changes, neurological pathologies and respiratory conditions.
